Strawberry Shortcake

The All-American Dessert Book Strawberry Shortcake


This is a great homemade shortcake, and really hits the spot after a great Fourth of July cookout, just sitting around talking.

You will need the following for your homemade shortcake, this recipe will feed about 6

1 3/4 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon grated orange peel
3 tablespoons unsalted butter
3/4 cup skim milk

For the filling you will need
2 pints fresh strawberries (you will need to slice these)
1 tablespoon orange juice
1 tablespoon sugar

you can use vanilla yogurt and mint leaves to put on your plate for a garnish

Step 1 Preheat your oven to 450. Spray a baking sheet with a vegetable cooking spray. (I use Pam) Then set your baking pan aside
Step 2 Take a large mixing bowl, and sift the flour, sugar,and your baking powder. Then add your grated orange peel
I take a fork and mixing the butter to the flour misture until I have coarse crumbs. Then stir in the milk and mix until the mixture is a soft dough

Step 3 Lightly flour a cutting board and begin rolling out your mixture to about 1/2 inch thickness, then take a biscuit cutter ( I just use an glass )to cut out your biscuits. Place your cut out biscuits on your baking sheet. Bake for 12 or 15 minutes or until golden brown.

Step 4 Preparing your filling. Take a large bowl add strawberrie, sugar and your orange juice and mix

Step 5 Split your warm biscuit in half, put the bottoms of your biscuits on serving plate and add your filling and top with your top half of the biscuit. you can then use the remaining filling if you have any left to garnish your dessert along with the mint leaves and yougart
